Remember my challenge that began a few weeks ago? Well, we are on week 4--so 4 down 8 more to go! For the first category I chose to complete at least 2 vigorous workouts that are 20 minutes long--no problem. Don't forget I have two very energetic girls that keep me on my toes at all times, plus I have really gotten into a groove with some classes that I am attending at the YMCA-so that makes it easy to get my workouts in. Last week I added the next category to my routine.
For the second category: Reach the Beach, I have chosen to eat fish at least twice a week because I felt the other two options were too easy. I already drink 64 ounces of water daily and consume 3 servings of low-fat dairy daily--I can't stand milk so I use yogurt and cheese to fulfill this need. I have been on a quest to find yummy seafood recipes because I am not a big fan of fish. I love crab, shrimp, tuna and salmon though! Well, I fixed grilled salmon the other night and it was fabulous--just like the restaurants. It was super easy so I wanted to share the recipe.

That salmon looks really good... I've NEVER fixed salmon!
