An Ecuadorian Meal

On the last evening that we spent with our great guests we were treated to a very nice homemade Ecuadorian meal. It was a lot of fun watching Carla & Jorge work together as they created appetizers, soup & an entree. The appetizer consisted of fresh calamari with a yummy dipping sauce & fried plantain (an Ecuador banana) with a tomato & onion mixture on top. They both were extremely tasty.
The second course was a soup that included plantain, carrots, green peppers, peanut butter, tuna & a few other various things. The entree was a delicious mixture of rice, calamari, cilantro, peas, carrots, & green peppers. We had such a good time tasting new things and it was a lot of fun watching someone else cook in my kitchen.
After dinner we had some fun playing the Wii. Dad & Jorge had a great time "boxing".
