Yum!

I received this recipe from Brian's aunt Barb and it is so delicious. As I enjoyed it for lunch today I thought I should share. It is very low in calories and fat plus full of protein and fiber. I have enjoyed it by itself, wrapped in a tortilla, with pretzels or tortilla chips. Enjoy!

Three Bean Salad with Lemon & Basil
2/3 Cup shelled fresh or frozen edamame (green soybeans)
1 tsp. grated lemon zest
1 1/2 Tbls fresh lemon juice
1 Tbls olive oil
1/2 tsp. salt
1/4 tsp. ground pepper
1 (15 oz.) can black beans, rinsed and drained
1 (15 oz) can small white beans, rinsed and drained
1/2 small red onion, finely diced
1/2 small yellow bell pepper, seeded and finely chopped
5 large basil leaves, thinly sliced
1. Cook edamame according to package. Rinse in a colander under cold water, drain.
2. Combine lemon zest, lemon juice, oil, salt and pepper in a medium bowl. Add edamme, black and white beans, red onion, bell pepper and basil.
3. Toss to coat.
**If you make the salad ahead of time, transfer to an airtight container and refrigerate up to 2 days, but don't add the basil until the last minute.
